Lancashire Hot Pot

A unique design from my lino cut recipe series; each tile is an ingredient, that when tessellated together, form the recipe for a delicious traditional Lancashire Hot pot; Lamb, onions, carrots, potatoes, stock, bay leaves, thyme, bouquet garni, olive oil and spring onion to garnish. 
To complete the authentic Lancashire image, three Swaledale sheep graze in front of a drystone wall in the Lancashire hills.

Recipe

Chop meat into chunks and brown in a pan. Fry onions and carrots until golden, sprinkle in flour, worcestershire sauce and thyme. Pour in stock and bring to the boil, stir in meat and bay leaves. 

Arrange sliced potatoes on top and pop in the oven for 1 1/2 hours.
 
Serve - Straight from the pan with red wine and green vegetables
