Cream of Spinach Soup

Recipe

Sweat the onion and garlic in the oil, add half the spinach and all of the stock. Simmer for five minutes. Add the cream and the rest of the spinach.
Blend and serve with a swirl of cream and freshly ground black pepper.

Serving option

Add a soft poached egg and sprinkle with parsley for a tasty, filling meal.
