Warm the oil in a pan, season and add the chopped vegetables. Sweat until soft and add the stock. Bring to the boil and simmer for 20 minutes.
Blend and serve with a dollop of cream, a sprinkling of parsley and freshly ground black pepper.

Serving option

Add a medium sized oyster (without shell!) for a distinctive garnish
